Fresh Pasta Dough

I love making my own pasta. It's inexpensive, its easy and you'll always have eggs and flour in the pantry.
You can roll this out by hand with a rolling pin, but I'd recommend using a pasta roller if you have one, you'll get a more consistent result.



INGREDIENTS:

2 Eggs
1 Cup of flour


PROCEDURE:

Pour the cup of flour on a clean counter-top and make a well in the centre.

Crack the egg into the well and begin mixing with a fork.

Keep mixing until the egg and flour begin to make a stiff dough, then start mixing by hand.  Don't worry about incorporating all of the flour. the dough should be stiff but not dry.

once you have your ball of dough, kneed it for a minute, wrap it in plastic wrap and place in the fridge for a 1/2 hour. This will help the dough relax and build the gluten.

After the dough has rested, roll it into sheets and cut into the pasta of your choice!
